Sopressa and pickled vegetables
Soil: clay-sedimentary valley floor, well suited to Corvina and contributing freshness and balance.
Grape varieties: 100% organic Corvina, approx. 3,300 vines/ha.
Yield per hectare: 100 q/ha. Harvest: hand-picked at full ripeness.
Vinification: gentle pressing and rosé vinification with 24-hour skin contact. Secondary fermentation in autoclave (Charmat method) with selected yeasts and sugar; lees ageing for about six weeks.
Colour: pale bright pink with fine, persistent bubbles.
Analysis: alcohol 12% vol; total acidity 6.9 g/l; residual sugar 8.2 g/l; pressure 5.5 atm.
Aromas: fresh and delicate, with floral notes and hints of red berries.
Palate: dry, fresh and balanced, with fine bubbles and good drinkability.
Food pairing: aperitif wine, ideal with appetizers, finger food, light first courses and fish dishes.
Serving temperature: serve well chilled at around 8 °C. Best enjoyed young.
