Veal cheeks
Soil: limestone and medium-textured soil, with good skeleton content and excellent drainage.
Vineyard location and age: Moron hill vineyards at approx. 200 m a.s.l., with vines aged 20–30 years.
Grape varieties: Corvina, Corvinone, Rondinella and Molinara, hand-selected.
Yield per hectare: approx. 80 q/ha.
Harvest: hand-picked from September, followed by a long natural drying process of approx. 100 days to concentrate aromas, structure and elegance.
Vinification: gentle pressing and maceration on the skins with daily pump-overs; fermentation in stainless steel at controlled temperature for about 40 days.
Ageing: over five years in total. First 30 months in 225-litre French oak barriques (Allier), followed by 12 months in 1,000-litre French oak casks and further bottle ageing.
Colour: deep ruby red with garnet reflections developing over time.
Analysis: alcohol 16% vol; total acidity 5.2 g/l; residual sugar 4.2 g/l.
Aromas: complex bouquet of ripe red fruit, morello cherry, plum and cherry in spirit, with floral hints, sweet spices, liquorice and light chocolate notes.
Palate: full-bodied, warm and smooth, with velvety tannins and great harmony; long and evolving finish.
Food pairing: ideal with game, braised meats, rich red meats, roasts and aged cheeses; also suitable as a meditation wine.
Serving temperature: 18–20 °C in large glasses to allow the wine to breathe.
